How do I fix this?

Butchers block that is three years old. Wax and oil every few months. Few months ago fading started to appear in high use areas. Guy who made it said to try a long soak with just oil and leave for 24 hours. Since then white stain now appearing and getting worse. Requires oiling every few days to stay in colour. Following photos are just a few hours after oil. Guy who made it had said maybe it’s some sort of reaction? He also recommended not sanding it back and starting again due to the type of timber - the pores may block and would require very frequent oiling.
