The company says many varieties of kitchen cabinet door profile "stickings" can be machined without manual setup between different profiles. What joint to use?

I have two flat pieces of wood I would like to join together to create a shelf under a servery window. Each of them is 2 3/8-inch thick x 12-inch wide x 36-inch long. They weigh about 30lb each for a total weight of 60lb. What would be the best way to join them? I am thinking a dovetail joint, but wondered if the wood is too thick for that? For mounting I am thinking of creating a floating system using 10-inch bolts, evenly spaced - 5 inches into brickwork and 5 inches into the wood. Am open to any and all ideas. I am from Perth W.A. Australia.
