Removing pith from green live edge?

Hello, I’m in sunny (yet humid) South Florida and have amassed about 20 (average size 4 feet x 2 feet) logs of Mahogany, Mango, Oak, Black Olive, and Red Maple thanks to Hurricane Irma. I don’t have the means or space to mill/store the lumber, so I sealed all the wet ends and and stacked them in a dry shed. However, most of the logs are cracking. I cut one of the mahogany logs into 10 1-inch disks to make clocks with naval gauges. Will drilling the pith out of these disks and (something I will have to do anyway) applying a coat of sealer aid in the drying process and reduce the risk of further cracking??
