End grain cutting board hiccup

I am trying to make my first end grain cutting board out of red oak and when I cut the board into slices, I found that there were some cracks inside the cutting board. This means when I rotate the slices to make the end grain board, there are holes in the board. Since this is a cutting surface, I am unsure if filling the holes with glue or epoxy will be sufficient. How can I best use this wood? Thank you!
