Does this indicate poor quality live edge slabs?

I ordered a custom live edge slab L-shaped desk months ago, after giving him a large deposit, the woodworking artist was dragging his feet and avoiding emails, texts, calls. I finally threatened to eliminate pay if he doesn't get moving and suddenly within weeks the project was magically done. I'm paying top dollar for three slabs (plus labor).

The completed desk has about 10 bow ties. This was not discussed or approved by me at all, but I know that's to close cracks. I was wondering if that's an indication of lesser quality wood? There are also a lot of grains, knots, discoloration and staining. Also, the return is only 30 inches depth/wide and he used two slabs fused together with an obvious seam. Does that indicate that he rushed to just take any slabs? (because 30-inch depth is not hard to find, why have an unnecessary seam?)

I included pictures of the raw slabs. I'm feeling greatly taken advantage of and played for a fool. Please advise. Would so greatly appreciate your professional opinion! Thank you so much.
